Supermarkets are turning to enhanced fresh food assortments. While a fresh focus can build customer traffic, it can present challenges, particularly for efficiency-driven traditional supermarkets. Organics are hot and high ticket. But they may not work everywhere. Other challenges revolve around generating the right turn/margin balances, labor allocation and creation of market-specific strategies. Fresh must also be factored into a retailer's overall business plan and should compliment vendor-dollar driven center store selections.

Macro-trends are forcing big changes in the food business and consumer food consumption. Prices are climbing, organics are rising in popularity, locally grown is growing at a fast pace, and green is the color of money and the color of social responsibility. At the same time, consumer consciousness of healthy eating habits is at an all-time high. This special closing keynote will feature Phil Lempert, known to consumers as The Supermarket Guru and seen on the Today show and heard weekly on radio. For more than 20 years, Lempert, an expert analyst on consumer behavior, marketing trends, new products and food trends has identified and explained impending trends to consumers and some of the most prestigious companies worldwide. Today he will focus on trends around sustainability in terms of economics, food and the environment and the implications of sustainability on the food business in 2008 and beyond.
